Breakfasts



1. Burritos: Tortillas, eggs, bacon or sausage, cheese, salsa. Brown meat, mix in eggs, cook until set, place egg/meat in tortilla and top with cheese and salsa.

2. Breakfast Hobos: Very tiny diced potato (or very thinly sliced), egg, bacon, salt, black pepper, & 1 tablespoon water. Place bacon on tin foil, top with potato, salt, pepper, water and egg(s) on top, wrap tightly, bake in fire about 30 minutes.

3. Eggs in Jail: Bread, eggs, butter. Butter bread on each side, cut 2 inch hole in center of slices, place bread in skillet, crack an egg into the hole. Cook until bread  is toasted on one side, turn and toast on other side. Extra: Toast "holes" then sprinkle with cinnamon and sugar!

4. Oatmeal: Instant oatmeal packets, water; place oatmeal in a cup, pour in 1/4 cup hot water, let sit a few minutes, and stir. May add dried fruit such as apples, raisins, prunes, etc.

5. Pancakes (store version): Shaker pancake mix, water, syrup. Add water according to directions. Shake well and cook on griddle.

6. Pancakes (homemade version): Syrup. At home, place in gallon size freezer bag 1-1/2 cups all-purpose flour, 2 Tablespoons sugar, 2 teaspoons baking powder, 1/2 teaspoon baking soda, 1/2 teaspoon salt. At camp, add to bag 1-1/4 cups milk, 2 eggs, 2 Tablespoons oil or melted butter. Seal bag and mix well. If too thick, add just a little more milk. For ease, make a small snip at one corner of bag to pour batter onto griddle.

BACKPACKING IDEAS

1. Instant oatmeal

2. Cereal bars (high fiber! NOT high sugar!)

3. Dried fruit and nuts (can also add to oatmeal)

4. Pre-make your own peanut butter on whole wheat crackers

5. Cheese sticks and dried fruit or crackers

Lunch



1. Pita Pizza: Pocket-style pita bread, jarred spaghetti sauce, pepperoni, cheese. Cut pita in half, stuff with ingredients, wrap in tin foil, toast over fire about 5 minutes.

2. The Classic: Peanut Butter and Banana sandwiches

3. The Other Classic: BLT's (cook extra bacon at breakfast)

4. Canned Chili with Tortilla Chips

5. Baked Beans on a Bun

6. Hot dogs on a stick. Serve with corn on cob roasted over fire in their husks about 15 minutes.

7. Ham & Cheese Pull Apart (serves 6): Large Italian bread loaf, cheese slices, deli ham, butter, mustard (optional). Make 12 slices into loaf being sure not to cut all the way through, tuck slices of cheese and ham into every other slice. (Also spread mustard into slices if desired). Rub butter all over tinfoil, wrap the loaf and seal well. Place over fire, turning occasionally, total time about 15-20 minutes.

BACKPACKING IDEAS

1. Whole grain crackers with cheese or peanut butter, dried fruit

2. Jerky with dried fruit and nuts

3. Ramen noodles (not very healthy, but okay for occasional comfort food)

4. Cliff bars

5. Whole wheat tortillas with hummus, carrot sticks

Dinner



Easy Tip: Food is always tastier if you use seasoning! Try seasoned salt or herb blends to add tons of flavor. You can sprinkle them on any meats or vegetables before cooking.

1. Kebabs: Meat - fully cooked sausage like Kielbasa is easiest, but can also use chicken or beef. Veggies - try tomatoes, bell peppers, purple onion, mushrooms, zucchini, summer squash, whatever you like. Sprinkle with seasoning before you cook. Pictures always show the meat and veggies on the same skewer because it's pretty. But it's much easier to cook the meat on one skewer and veggies on another because the meat will take much longer to cook than the veggies.

2. Hobo Packets: see meat and vegetables for Kebabs, but be sure to cut everything in smaller chunks. Can also use small veggies like corn, peas, green beans, potatoes (be sure to cut potatoes very, very small so they cook easily). Add seasoning before sealing the tin foil. Other flavor booster ideas: BBQ sauce, cream of mushroom soup, Campbell's cheddar soup, ketchup. (If you use raw meat such as hamburger or chicken, expect to cook about an hour over fire. Pre-cooked meats will only take about 20-30 minutes.)

3. Chili & Cornbread: one pound ground beef or turkey, two cans pinto beans, one large OR two small cans crushed tomatoes, chili seasoning packet and one or two boxes Jiffy cornbread mix. Brown meat in a dutch oven. Add beans, tomatoes and chili seasoning. Stir well. Put the lid on and let simmer at least 30 minutes. Stir once in awhile so bottom doesn't burn. Mix Jiffy cornbread according to directions on box. You can place spoonfuls of batter on top of chili, cover with lid and simmer until cornbread is done OR pour batter onto a pan and cook like pancakes.

4. Sausage Dogs: Cook your favorite sausage or brat on a grill/fire. Great with corn on the cob (cook 15 minutes in their husks on the fire/grill) AND/OR with canned baked beans.

5. Frito Pie: Snack size bags of Frito corn chips (Doritos also good), canned chili, shredded cheese. Heat the chili in a pot. Open a bag of chips. Spoon chili into the bag onto the chips. Top with cheese and eat with a spoon. Other toppings to try: diced onion, sour cream, chopped lettuce.

6. Nachos: tortilla chips, canned black beans, canned corn, shredded cheese. Drain the liquid from the beans and corn. Line a large pan with tin foil. Spread out chips in single layer, but overlapping so cheese doesn't drop to bottom of pan. Sprinkle beans and corn onto chips. Top with cheese. Cover with tin foil, try to "tent" the foil so it doesn't touch the cheese. Place over fire. Check every few minutes until cheese is melted. Other toppings: lettuce, salsa, sour cream.

7. Baked potatoes: Wash potatoes well. Stab with a fork on two sides. Wrap tightly in two layers of tin foil and place in hot ashes, covering completely. Let sit an hour before testing for doneness. Topping ideas: butter, cheese, chili, sour cream, bacon.

BACKPACKING IDEAS
Tip: Be sure to count up how much extra water you will need for cooking!

1. Mountain house meals (most require hot water)

2. Lipton/Knorr brand Pasta Sides (be careful, these can be high in salt) with jerky or chicken or tuna in a pouch

3. Instant mashed potatoes (Idahoan makes good ones) with jerky or chicken in a pouch, dried fruit.

4. Couscous with jerky or chicken or tuna in a pouch. Good also topped with dried fruit and nuts.

5. Try the Asian food section - they have several soup and noodle packets that just need water.

6. Try boxed rice and bean mixes. Pour into plastic baggies for packing (don't forget to cut out the directions!)

7. Pepperoni slices, string cheese and pizza flavored crackers.

Desserts!



1. Dessert Burritos: tortillas, chocolate chips, mini marshmallows. Roll the chocolate and marshmallows in tortilla. Wrap in tin foil and heat over fire about 2-3 minutes. Variation: use Nutella instead of chocolate chips.
 
2. Fudge Stripe S'mores: Keebler's fudge stripe cookies, large marshmallows. Roast a mallows, squeeze between two cookies.

3. Camper's Crumble: 16 ounce package oatmeal cookie mix, 1/2 stick of butter (melted), two 21 ounce cans of apple pie filling. Line dutch oven with tin foil. Lightly oil oven. Spread pie filling onto bottom. Combine cookie mix and butter. Sprinkle over pie filling. Place lid on oven. Bake with 3-4 coals on top about 15-20 minutes until golden on top.

4. Giant Oreo Skillet Cookie: 1 package Pillsbury cookie dough of choice, 1 package oreo cookies. Spread cookie dough into skillet. Crush/chop oreo cookies and place on top. Place lid on top, top with 3-4 coals and bake about 12-15 minutes until just golden on top.

5. Cherry Chocolate Dump Cake: 2 cans cherry pie filling, 1 box Devil's food cake mix, 1 can cola or cherry soda, one 6 ounce package chocolate chips. Line dutch oven with foil. Lightly oil. Pour cherry pie filling into oven. Sprinkle cake mix over cherries. Pour soda over top. Do not stir. Top with lid and bake 20-30 minutes with 7-10 coals at the bottom and 14-16 coals on top. Sprinkle chocolate chips on top. Serve when chips are melty.

5. Chocolate dipped fruit or nuts
